SANITIZATION OF EQUIP. AND UTENSILS Critical

Violation remains - Could not correct the critical violation noted during the original routine inspection (noted in paragraph below). Another critical item re-inspection will occur by 3-26-26. PLEASE VERIFY THE DISHWASHER IS REACHING OR EXCEEDING 160F ON THE DISHWASHER THERMOMETER OWNED BY CRACKER BARREL. The Cracker Barrel thermometers accuracy was verified by comparing it with the Health Inspectors thermometer. Do not rely on the dishwasher contractor's thermometer as I can not verify its accuracy. - The temperature of the rinse cycle of the heat sanitizing dish machine noted not adequate to achieve final sanitization. Both the facilities round disc style dishwasher thermometer and the identical one used by the Health Department noted a rinse temperature around 150F. Please make sure that whomever repairs the dishwasher utilizes your black round dishtemp thermometer to verify the unit is at least 160F. A re-inspection of this critical item will occur before 2-6-26 unless the Health Inspector is contacted directly regarding a delay.

Floors in the kitchen noted in need of repair (missing floor tiles and low grout levels between tiles) especially in the ware washing area.
