An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. The dish machine sanitizer pump was primed to regain flow of sanitizer into the machine. Critical violation corrected.

SANITIZATION OF EQUIP. AND UTENSILS Critical

An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Machine was primed to correct the violation. Be sure to check the concentration daily with a test strip. Also if the jug of sanitizer runs dry the machine will need to be primed again when the new jug of sanitizer is replaced.
