In - use utensil noted being stored with the handle laying in the bulk ingredient bins.

CONTAMINATION FROM WIPING CLOTHS

Wiping cloths noted not stored in adequate sanitizing solution. Spray solution used for cleaning customer tables and full service case is over 400 ppm quat. Wiping cloths are not stored in a sanitizing solution.

TEMPERATURE MEASURING DEVICES

Front coffee area under counter cooler noted with no thermometer.

FOOD CONTACT SURFACES - CLEAN

The donut sheeting machine has large amounts flour build up on dough belt rollers side guards and interior surfaces of machine.

Comment 5 - Inspector General Comment

The spray bottle sanitizer currently used is not labeled for use on food contact surfaces only use on customer tables and chairs discontinue the use around the full service cases with the donuts plates and to-go containers near by to avoid overspray and potential contamination of the immedieate food prep areas. After rearranging the customer counter I would suggest creating some kind of barrier to restrict non-employees from entering the food prep/coffee front areas and the bakery area in the rear of the building.

EMPLOYEE HYGIENE Critical

Employee noted not washing hands on a frequent basis after using point of sale phones touching body and before re-gloving.

FOOD CONTACT SURFACES - CLEAN

Ice machine near coffee area has heavy floating debris build up in the interior water reservoir and around freezing plate. The donut sheeting machine has large amounts of old debris build up on dough belt rollers dough cutters and interior surfaces of machine.

Coolers in the coffee area and in the bakery area noted with no thermometer.

FLOORS WALLS CEILINGS

Floors in the food prep area noted in need of cleaning. -Grease build up under and around donut fryer legs. -Floor trough drains observed with food debris build up not completely flushed clean.

FOOD CONTACT SURFACES - DESIGN

Butcher block work table near floor stand mixer noted not in good repair. Surface of work table is rough.
