SANITIZATION OF EQUIP. AND UTENSILS Critical

An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Dish machine sanitizer hose was found to be pinched under chemical storage rack which did not allow sanitizer to flow freely to the dish machine.

Vent system in food serving line noted not clean. Observed heavy debris build up on hvac pipe and on the vents themselves.

Equipment exteriors and cabinet handles noted in need of detail cleaning.
