An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Supply of sanitizer was depleated in bucket at time of inspection. New bucket of sanitizer was replaced.
COOLING OF POTENTIALLY HAZARDOUS FOOD Critical

Noodles noted not being adequately cooled to prevent the growth of harmful bacteria. Observed noodles cooked and cooled at 45 degrees in the walk in cooler from the previous day discarded. Kitchen staff will begin cooling noodles in shallow large pans before transefering into storage containers.
