IN-USE UTENSILS

In - use utensil noted being stored with the handle laying in the following but not limited to flour sugar and cole slaw. In use utensils were noted being stored or contacting unclean surfaces. Food tongs being stored on handles of equipment where the door surface and the wall it comes in contact with when door is opened is not a sanitary surface to store clean utensils.

THAWING POTENTIALLY HAZARDOUS FOOD

Potentially hazardous foods noted not being thawed using approved methods. Fish thawing without original packaging being opened to allow atmospheric air to be let into the packaging.

STORAGE/HANDLING CLEAN EQUIP & UTENSILS

Clean Utensils noted stored in a drawer with other non-sanitary items near the prep area in the kitchen.

FLOORS WALLS CEILINGS

Floors in the kitchen are slippery and should be cleaned more frequently.
