  The temperature of the rinse cycle of the heat sanitizing dish machine reached 164F degrees when tested.

  An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Chlorine sanitizer is connected to dish machine but was not able to see a concentration reading. Checked sanitizing temperature of machine as well the temperature reached a maximum of 154F.
