Ice machine interior not properly maintained. Observed build up along ice deflector edge.

STORAGE/HANDLING CLEAN EQUIP & UTENSILS

Clean utensils noted stored in an unprotected location. Observed debris build up in clean utensil storage bins in kitchen area. Soda cup storage mat contaminated with a cardboard box in the wait station.

FLOORS WALLS CEILINGS

Unsealed wood and other items in the food prep area noted not easily cleanable. Floors in the ware-washing area noted needs repairing.

Floor fan in dish washing area noted with debris build up on blade guard.

VENTILATION HOOD SYSTEM

Filters for hood vent above flat top noted not clean.

FLOORS WALLS CEILINGS

Floors in the ware-washing area are in need of repair. Floor planks are missing in varous areas. Walls and door frames near the pizza oven area are not easily cleanable. Exposed door framing and absorbent wall material are not properly sealed.

Bar tap shelf behind bar is constructed of an absorbent material and is not properly sealed.
