FOOD DISPLAY SERVICE AND TRANSPORT TEMP Critical

Time rather than temperature was being used but in an inproper manner as a control for public health protection. All whipped butter that is not being held at 41F or below must be marked physically with the date and time. Each container must be able to be identified by the time that is marked meaning blanket time marking is not allowed unless all product was removed from refrigeration or prepped at the same time. This critical item will be re-inspected for compliance sometime within 10 days. If there are questions or confusion regarding the date and time marking of TCS foods the inspector must be contacted before re-inspection occurs. Please see the ''Corrective Action'' section of this report for additional written clarification.
