Pop nozzle (western most dispenser closest to casino) and nozzle holders noted not properly maintained/cleaned. Mildew/mold noted under red cap and inside of the black holder.

FOOD DISPLAY SERVICE AND TRANSPORT TEMP Critical
Steam table food items including ground beef chili cheese sauce etc. noted not being held at 140 degrees fahrenheit or above. Food items were removed from service and the thermostat set point was increased to correct the violation. It was set to low which is not warm enough. Utilization of a food thermometer will help to prevent this violation in the future.
