Raw meats are to be stored according to final cooking temperature as follows from bottom to top: chicken beef pork seafood and all ready-to-eat or pre-cooked foods on top.     Sushi Tuna noted being thawed in the vacuum sealed bag/container. ALL seafood must be completely removed from the vacuum sealed bag/container immediately upon removal from the freezer. Seafood must be thawed or stored outside of the vacuum sealed bag.Critical violation corrected through training on the topic.
