POT HAZ RTE FOOD DATING AND DISPOSITION

Ready to eat potentially hazardous food in the form of spinach artichoke dip house made sauces and hard meats opened out of their original package was noted not being properly dated for disposition.

CROSS CONTAMINATION Critical

Raw meat noted being stored above food not to be further cooked. Observed fish being stored below raw beef in the drawer style cooler below flat top grill.

FOOD CONTACT SURFACES - CLEAN

Observed knives not properly cleaned prior to storing back on the knife block with the clean knives.

HANDWASHING LAVATORIES AND SUPPLIES Critical

Soap was noted not provided at the hand washing lavatory in the lower level prep area.

FLOORS WALLS CEILINGS

Walls in the lower level food prep area noted not easily cleanable. The walls are unpainted absorbent wall board. Ceiling in the food prep area is bare duct work steel trusses and plumbing that is not easily cleanable. All food prep areas must have a ceiling that is not difficult to clean.

IN-USE UTENSILS

In - use utensil noted being stored with the handle laying in the flour near the pizza oven.

CONTAMINATION DURING STORAGE

Cases of food noted being stored on the floor in walk-in freezer.
