CONTAMINATION DURING STORAGE
Salmon Tuna and other fish noted being stored in the reach-in cooler still in the vacuum bags some sealed and some cut open. All fish and seafood products unless specifically noted on the packaging must completely removed from the vacuum seal bags as soon as they are removed from the freezer. They cannot be thawed or stored at refrigerator temperatures in the vacuum bag.

Rolling black cart dry storage shelving and reach-in freezer door gaskets noted not clean.

COLD AND HOT STORAGE EQUIPMENT Critical
Cold holding unit in the facility being used for cold holding temp of 41 degrees F was not functioning adequately. Temperature was noted at 47F. All items that have been in cooler for more than 3 hours should be removed from service and disposed of. Cooler thermostat was turned down (colder) to correct the violation. After waiting a short period of time the cooler was noted at 35F.
