• SANITIZATION OF EQUIP. AND UTENSILS Critical

  Sanitizer dispenser for the 3 compartment sink is testing at 700 PPM Lactic Acid. The temperature of the rinse cycle of the heat sanitizing dish machine was tested and found to be properly sanitizing. Observed 161.7F when tested. An adequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Tested and found to be 50 PPM of chlorine.
