Dish machine is now working correctly with the correct amount of sanitizer in final phase.

EMPLOYEE HYGIENE Critical

A cook was observed eating in an area that was inapproriate (on main line wihile preping food) and could result in contamination of food products or clean work areas. This was noted during the time of the respection for the cooler and dish machine.

SANITIZATION OF EQUIP. AND UTENSILS Critical

An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. No sanitizer present. The line has crack and needs to be primed before each use until fixed.
