    Food items stored within 3 door upright cooler are at 41F or below. Items are held in this cooler only for service and then stored back in another cooler.

  • COLD AND HOT STORAGE EQUIPMENT Critical

    3 door upright cooler in the facility being used for cold holding temp of 41 degrees F was not functioning adequately. Unit has been defrosted and is holding food items at or below 41F but has not been repaired to confidently maintain proper cooling temperatures.

    In - use utensil noted being stored with the handle laying in the sugar in the coffee/desert area.

    Chicken wings noted not being adequately cooled to prevent the growth of harmful bacteria. 3 door upright cooler not maintaining proper cooling temperatures. Food items out of temperature were discarded items within 41F were relocated to the walk in cooler or the prep top coolers in the kitchen.

    Employee handwashing frequency and practices have greatly improved.

    Potentially hazardous food cooking temperatures are being verified through probe thermometer usage by the kitchen staff.

  • SANITIZATION OF EQUIP. AND UTENSILS Critical

    The chlorine sanitizer was noted to be at proper concentration in the final rinse of the dish machine. Observed 50 ppm chlorine.

  • CROSS CONTAMINATION Critical

    Chislic dredging ingredients in the prep top cooler have been arranged to avoid cross contamination to ready to eat foods that are also stored in close proximity in the same prep cooler.
