CONTAMINATION DURING STORAGE

Raw salmon for sushi was noted being prepared in the dishwashing area on the 3-compartment sink and by the dishwasher. The salmon can get contaminated by dirty dishes and possibly contaminated by chlorine sanitizer. The fish should be prepped on a sanitized surface by the prep sink that is next to the handwashing sink in the kitchen.
